Japan's Beloved Home Cooking

By Julie Takamatsu

It's been quite chilly recently with trade-winds blowing at more then 30mph. Mother nature is kicking in the final season of winter before Spring pop up. Definitely creating the mood for some hot comfort food. Japanese shabu-shabu comes to mind. What is it?

According to source, shabu-shabu is a Japanese version of hot pot. The dish is prepared by putting in thin slice of meat, all sort of vegetables, tofu, noodles, shiitake mushrooms, clams, shrimps and whatever else you want in a pot of boiling water or mouthwatering dashi (broth). I usually used a can of Campbell chicken or beef broth and ½ can of water so that it is not too salty. You can also dip it in different type of sauce before eating. Sometimes people also drink the soup or combined it with rice.

I was invited one Fall evening by my Japanese friend, Tomoko, to her house for shabu-shabu while teaching English in Japan. Prior to that, I had no idea what the term meant. I walked into a room full of rainbow colors of foods and the delicious smell of boiling broth. As we enjoyed a meal share together of great food and wonderful times, I began to fall in love with the Japanese hot pot. Not only did I eat it during the cold months, but also sweat it out during the hot summer months. There was something special about siting at a dinner table and sharing the same pot. Not only did we enjoyed a wonderful evening, but we were able to cultivate life-long friendships.

What are you waiting for? Gather your friends and family members for a evening of easy home cooked meal that not only is wonderfully delicious, but is also very healthy. Shabu-Shabu is easy as counting 1,2 and 3. You just need to prep (wash the vegetable, meat or what ever your going to put in), broth (you can make your own or used a open up a can of broth) and cook. No other additional equipment needed. Pair that with a hot sake and you're all set. Isn't life enjoyable?

That sounds like my favourite style of cooking. Throw everything in until it tastes right and then stop adding stuff.

Cooking can be so much fun but getting people to sit round a table? Isn't that for the TV to stand on?

Thank you for sharing the joy of food, family and friends,Julie. We Americans have much to relearn from other peoples about true pleasures.
Best wishes.

I remember going to one of my favorite Japanese restaurants in Denver. Whole families would come in and sit around a heated pot in the middle of the table. They would add all kinds of things to the pot.

It was interesting to see the buffet of things they had to choose from to add to their meal. They also had a Japanese
TV channel on in the corner to add to the atmosphere.

I like that kind of meal year-round, too! I agree that the canned soup is far too salty.
